Among the polyphenols of olive oil, oleuropein, hydroxytyrosol, and resveratrol possess marked antioxidant activity and reduce monocytoid cell adhesion to stimulated endothelium, as well as vascular cell adhesion molecule-1 (VCAM-1) mRNA protein expression, which is proved to be related to NF-kB and activator protein-1.[1]

Method

The polyphenols of olive oil are added to tissue culture medium for 30 minutes at various concentrations, after which VCAM-1 expression is induced by the addition of LPS at 1 μg/mL for a further 16 h.
