Caffeic acid is a naturally occurring hydroxycinnamic acid that acts as an inhibitor of 5-lipoxygenase (5-LO) and TRPV1 ion channels. By suppressing 5-LO-mediated leukotriene biosynthesis and scavenging reactive oxygen species, caffeic acid exhibits potent antioxidant, anti-inflammatory, and immunomodulatory activities. Additionally, it reduces oxidative stress-induced aflatoxin production in fungal species and inhibits carcinogenesis across various cell models. [1]
